Room-temperature extraction and refrigerator-cold brew are not simply the same recipe at two different temperatures. Temperature changes how quickly soluble compounds move from ground coffee into water, while grind size, coffee-to-water ratio, roast level and contact time determine where the cup finally lands. That is why two “cold coffees” can taste noticeably different even when both are brewed for many hours.
Room temperature vs cold brew: the useful distinction
In everyday café language, “cold brew” covers many low-temperature methods. Coffee research is more precise. A 2024 Scientific Reports study compared full-immersion brews at 4 °C, 22 °C and 92 °C and followed extraction and sensory profiles over time. Roast level was the strongest overall driver of flavour, followed by brewing temperature; longer brew time mattered too, but its effect became subtler as extraction approached a plateau.

Why temperature changes extraction
Coffee brewing is a solid–liquid extraction. Water removes soluble material from roasted coffee particles. Warmer water generally accelerates mass transfer, so a room-temperature immersion can reach a given level of dissolved solids sooner than a refrigerated brew. A 2019 cold-brew study also found grind size and contact time materially affected total dissolved solids, extraction yield, acidity measures and sensory results.
This does not mean “warmer is better.” It means the recipe has to be designed as a system. Change only temperature and leave everything else untouched, and you may overshoot or undershoot the flavour target.
Four variables worth checking before the label
1. Roast level
The 2024 study found roast level was the largest driver of sensory profile. A dark roast and light roast can respond differently even under the same temperature and time.
2. Grind size
Smaller particles expose more surface area and usually extract faster. This is why copying an “18-hour” or “24-hour” recipe without copying its grind can create a different cup.
3. Coffee-to-water ratio
A concentrate and a ready-to-drink brew are different products. Strength at serving time depends on the original ratio and any later dilution.
4. Time
Longer contact does not produce an unlimited increase in quality. As extraction approaches equilibrium, additional hours can produce smaller changes. Time is a tuning tool, not a badge of superiority.
Does room-temperature extraction mean “low acid”?
Be careful. “Acidity” can mean pH, titratable acidity or the sensory impression of sourness, and those are not interchangeable. Some studies comparing hot and cold methods report lower titratable acidity in cold-brew samples, but results depend on bean, roast and recipe. It is more accurate to describe a specific coffee’s measured or tasted profile than to promise every room-temperature coffee is “low acid.”
How to compare two brews fairly
- Use the same bean and roast when possible.
- Keep serving strength similar.
- Taste at the same serving temperature.
- Score aroma, sweetness, bitterness, perceived acidity, body and aftertaste.
- Do not infer health effects from sensory smoothness.
