Why a 24-Hour Extraction Window Matters in Slow Coffee

A 24-hour extraction target can be a useful production parameter, but it is not a universal optimum. Coffee extraction does not suddenly become “complete” at hour 24. The better question is what changes between the early, middle and late stages of a long immersion—and why a producer might choose 24 hours for a specific bean, roast, grind and ratio.

What research says about long immersion

In a 2024 full-immersion study, coffee brewed at 4 °C and 22 °C was sampled across time points extending to 24 hours. Roast level had the biggest effect on sensory profile, temperature came next, and extra brew time became more subtle as total dissolved solids approached a plateau. A 24-hour recipe can therefore be a practical endpoint without being a magic threshold.

A separate 2019 study tested 14 and 22 hours. Longer contact increased measurements such as extraction yield and total dissolved solids under the tested conditions, but sensory preference did not simply increase with time. Different beans and recipes can have different preferred endpoints.

The extraction curve: three stages

Stage 1 — fast extraction

When water first contacts ground coffee, readily soluble material moves quickly and strength rises rapidly.

Stage 2 — slower development

As the easiest material is depleted, extraction continues but the rate slows. Longer time can change strength, bitterness, acidity measures and aroma balance.

Stage 3 — approaching equilibrium

Eventually, each extra hour produces a smaller change in dissolved solids. “Twice as long” does not mean “twice as extracted.” Production decisions become more about repeatability and a target flavour than chasing a maximum number.

Why 24 hours may make sense for one producer

A small producer may choose 24 hours because it fits a repeatable daily workflow, produces the preferred sensory balance with a specific coffee, and gives a clear batch-control endpoint. Those are legitimate product-development reasons. They are stronger than saying “24 hours extracts all antioxidants” or “24 hours is healthiest,” neither of which is established by the brewing studies cited here.

Five things that move the “right” endpoint

  1. Temperature: 22 °C extraction advances faster than 4 °C under otherwise similar immersion conditions.
  2. Grind: finer particles generally speed extraction.
  3. Roast: roast changes coffee structure and sensory potential.
  4. Ratio: concentrate and ready-to-drink recipes target different strengths.
  5. Agitation and filtration: mixing and removal of fines affect repeatability and mouthfeel.

How to validate a 24-hour recipe without a laboratory

Use disciplined sensory controls. Keep bean, roast, grind, ratio and temperature fixed. Pull samples at 12, 16, 20 and 24 hours. Bring them to the same serving temperature, code them so the taster does not know which is which, and score aroma, sweetness, bitterness, perceived acidity, body and aftertaste. Repeat over multiple batches. This does not replace laboratory shelf-life or chemistry testing, but it is far better than choosing a number because it sounds premium.

What should remain constant in production?

If “24 hours” is part of the product story, control bean lot, roast profile, grind setting, coffee dose, water volume, brew-temperature range, vessel, start/stop time and filtration method. Otherwise the same 24-hour label can hide very different extractions.

24 hours and caffeine

Do not infer a caffeine dose from time alone. Dose, ratio, roast, grind, temperature and dilution matter. Health Canada gives average caffeine values for common coffee formats and recommends a maximum of 400 mg per day for adults, but a specific bottled coffee should not borrow an average as if it were a measured value.

Not universally. The preferred endpoint is recipe- and sensory-specific.

Does extraction stop at 24 hours?

No. It tends toward equilibrium; changes can continue, often at a slower rate.

Can the same 24-hour recipe be moved into a refrigerator?

Not with the expectation of the same result. Lower temperature slows extraction.

Is 24-hour coffee automatically smoother?

No. “Smoothness” depends on bean, roast, grind, ratio, temperature and filtration.
