“Volcanic soil” and “mountain coffee” sound romantic, but terroir is more useful when it is unpacked into measurable factors. Altitude changes temperature and growing conditions; slope changes sun exposure and drainage; soil affects water and nutrient availability; shade and rainfall shape plant stress; post-harvest processing can amplify or erase some of those differences. The cup is the result of the whole chain.

What coffee scientists mean by terroir

A 2022 review describes coffee terroir in terms of the sensory experience associated with place and discusses temperature, altitude, shade, rainfall, agronomy and soil among important environmental factors.
