A green coffee bean does not contain a finished “chocolate” or “nutty” flavour waiting to be washed into the cup. What we taste is built step by step: genetics and growing conditions shape the raw bean; post-harvest processing changes precursors; roasting creates a large part of the aroma chemistry; grinding exposes that chemistry; and water decides what is extracted. Thinking in stages makes coffee labels much easier to understand.
Stage 1: green coffee sets the starting material
Green Arabica contains sugars, organic acids, amino acids, lipids, chlorogenic acids and many other compounds. Variety, farm conditions, cherry maturity and storage all affect that starting composition. Research comparing green and roasted beans shows that origin and green-bean composition can still influence volatile profiles after roasting, even when roast colour is controlled.
This is why “Arabica” is useful information, but not a complete flavour description. Two Arabica lots can start with different chemistry before a roaster ever turns on the machine.
Stage 2: post-harvest processing edits the precursor map
After harvest, producers separate the seed from the fruit through washed, natural, honey or other processing systems. Fermentation and drying do not merely “clean” the bean; they can alter compounds that later participate in aroma formation. A 2023 study identifying chemical markers in green and roasted coffee found clear differences associated with post-harvest process.
The useful chain
Cherry → processing → drying → green-bean storage → roasting → resting → grinding → extraction → cup.
If a flavour changes, more than one stage may be responsible.
Stage 3: roasting is where the familiar coffee aroma expands
Roasting applies heat to a chemically complex seed. Maillard reactions, caramelization-like reactions, thermal degradation and other pathways create and transform volatile compounds. Studies of coffee aroma repeatedly show that roasted coffee has a far richer volatile profile than green coffee.
That does not mean darker roasting is automatically more flavourful. As roast progresses, origin-specific differences can be preserved, transformed or overwhelmed by stronger roast-derived notes. The goal is not maximum heat; it is a roast profile matched to the bean and the intended cup.
Stage 4: resting and grinding change what escapes
Freshly roasted coffee releases gases. Grinding massively increases surface area, so aroma compounds and gases can escape faster. For home drinkers, this explains a practical rule: grind close to brewing when possible, and keep unused roasted coffee protected from oxygen, heat and moisture.
“Fresh” also does not mean “seconds after roasting.” Some gas release is normal and can affect brewing. The best resting window depends on roast, package and brew method rather than one universal number.
Stage 5: water is the final editor
Brewing water dissolves a fraction of the roasted coffee. Temperature, contact time, grind, coffee-to-water ratio and mineral composition influence what moves into the cup. The same roasted beans can therefore taste cleaner, flatter, sharper or more bitter when the extraction system changes.
This is the final reason a flavour note should never be attributed to one variable alone. The bean provides possibilities; processing and roasting reshape them; brewing reveals a particular version.
